Le Raffiné de l’isle d’Orléans

Raffiné is the name given by Île d’Orléans inhabitants to their mature cheese. It is probably by phonetic slippage that  »affiné » (refined) became  »raffiné ». It was under the name Raffiné that Île d’Orléans cheese was marketed in the 50s and 60s. A soft cheese with a washed surface, it had a reputation for not tasting what it smelled like. Enjoy it with fresh bread like any other table cheese.

The story of Les Fromages de l’Isle d’Orléans begins with Jocelyn Labbé, a passionate historian. What started as a retirement project blossomed into a mission to revive the island’s long-lost cheese tradition, which had vanished in 1965. After years of experimentation alongside a food science expert, Jocelyn successfully recreated the recipe, which is now recognized as the oldest cheese recipe in North America.

Challenges in Recreating History

Reviving this ancient cheese was no easy task. During their trials, Jocelyn and his team discovered that the original cheese was likely influenced by environmental factors in the historic homes where it was made. Despite these challenges, they persevered, resulting in the delicious cheeses you can enjoy today.

About the Cheese Factory

The cheese factory was built on the foundations of an old hotel, Le Marquis, which was destroyed by a fire in 1971. Although cheese-making on Île d’Orléans dates back to the early days of the colony, there was never a cheese factory on the island until 2004. The cheese was made in the homes of our ancestors. On your next visit, take the opportunity to watch the cheese-making process through a large window that overlooks the production room.

Due to its immense popularity and limited production space, the Labbé family prioritizes selling their cheese directly from their fromagerie. Visitors are invited to observe the cheese-making process through a viewing window overlooking the factory.
